12 scallops (I used Publix frozen Sea Scallops)6 slices of sugar-free, nitrate-free bacon, cut in half 3 tbsp of olive oil 1 tbsp of fresh minced garlic 1 tsp of Dijon mustard 1/2 tsp of smoked paprika Salt and pepper to taste **I also added a couple dashes of liquid smoke1) Preheat oven to 375 2) Bake bacon halves for 5-7 mins on baking sheet with a little bit of an edge (make sure your are still able to wrap around scallops when remove from oven) 3) Wrap bacon around scallops and secure with toothpick 4) Combine remaining ingredients in bowl 5) Place scallops on same baking sheet; drizzle with ingredients in bowl 6) Bake 10-15 mins Enjoy! www.edibleharmony.com/garlic_dijon_bacon_wrapped_scallops/
