I found this recipe at www.elenaspantry.com (one of my favorite blogs). I changed it a bit (original recipe calls for leftover Thanksgiving turkey), but it turned out really good and leftovers will be delish 1 lb. turkey cutlets (cubed) 1/2 butternut squash (peeled and cubed) 1 onion (sliced thin) 1 cup chicken broth cooking fat- olive oil, coconut oil, I used ghee Heat oil in a large skillet on medium high. Cook turkey and onions until cooked through. Remove from pan to a plate. Drizzle more oil into the pan add squash. Cover and cook for 10 minutes, stirring often. Add broth to the squash in the pan. Cover and cook 10 more minutes. Add the turkey and onions to the pan with the squash and cook 10 more minutes. Simple dinner but fills you up and tastes yummy

sounds awesome! After the challenge, be careful with her site. She's got a boat load of cheats on there.
