SUNSHINE SAUCE
2tbs lime juice 1 clove garlic minced 1/2tsp pepper flakes 1 tbs coconut aminos/low sodium Tamari 1/4 tsp powdered ginger 1/2tsp rice vinegar 1/4 cup sunflower seed butter (no sugar) dash cayenne pepper 1/4 cup coconut milk
1. Mix all ingredients well
PAD THAI 1 batch Sunshine Sauce 2 large eggs 2 tsp coconut aminos/Tamari 2 tsp plus 1 tsp coconut oil 1/2 medium onion thin sliced 1 Chinese Cabbage ( they suggest snap peas, but I substituted since it's not allowed) 2 cups roasted spaghetti Squash (I didn't have any, it still tasted delicious without) toasted cashews
1.Beat egg and Tamari. Heat large pan with coconut oil. The egg needs to be thin. Cook and cut into thin strips
2. Using same pan, head coconut oil. Saute onion and cabbage about 2 min. Add spaghetti squash. OPTION-add cooked chicken or shrimp
3. Add Sunshine Sauce, and Toasted cashews
