Ingredients:
2 lbs ground turkey (we used 93/7) 1 whole zucchini 1 whole yellow squash 1 c. dried eggplant (optional) 1/2 c. almond meal 2 whole eggs oregano (to taste) garlic (to taste) sea salt (to taste)
Directions:
1. Preheat oven to 350 & spray muffin pan with olive oil cooking spray 2. Pulse veggies in food processor until well minced 3. Combine all ingredients until well blended 4. Scoop mixture into muffin cups (will be moist) 5. Bake for approx 20-30 minutes. Enjoy!
