What's the deal with sweet potato "fries" I know we can have sweet potatoes but something tells me we can't in this form?

If you make them yourself you can. Most of the restaurant and store-bought ones are rolled in flour or some sort of filler to make them crispy. And fried in cheap, bad oils. There are ton's of recipes for making your own.
