Breakfast: Oatmeal(right after working out), 2 slices turkey bacon Lunch: meatloaf(1 slice), cauliflower (1cup), salad Dinner: prime rib, broccoli, asparagus Snacks: 1 Apple with almond butter

Better on the carbs.
Protein looks pretty good. What are you doing post-workout...anything?
On the snacks...those are all fructose/sugar, which spikes your insulin.
I'm thinking you need a post-wrokout shake + banana. Nix the grapes as a snack later. Keep your other meals as they are with the addition of carb to one of them.

I need to get a protein powder to use after workouts I will go today if I can! Will also add some carbs to lunch meals just didn't want to have too many

We aren't try to be low-carb and the right carbs will help you use the proteins to build muscle, give you energy, allow your CNS to function, etc.

Whey protein is fine...we carry a few types. Charlie has one that's good, too.
What protein bar are you eating?
